Recipes Stuffed courgettes with rice and Manna Vegetarian Bolognese

Ingredients

  • 4 courgettes
  • 2 bags of rice
  • 1 jar of Manna Vegetarian Bolognese
  • 100 g grated cheese
  • 1 handful of arugula
  • A few parsley leaves, finely chopped
  • Olive oil
  • Pepper – salt

 

Preparation

  • Boil the rice in salted water and drain
  • Cut the courgettes in half lengthwise, hollow them out, drizzle with olive oil and season with salt and pepper
  • Place the halves on a baking tray lined with baking paper and place in a preheated oven at 180 degrees for 15 minutes
  • Meanwhile, mix the rice with the Manna Vegetarian Bolognese
  • Remove the courgettes from the oven and stuff them with the rice mixture
  • Sprinkle with grated cheese and place back in the oven for 15 minutes
  • Garnish the courgettes with finely chopped parsley and a few arugula leaves
